The Quest for the Holy Banana Bread

Once upon a time in the long, cold darkness that was my life before I met Paul, I dated a guy whose mother had a great banana bread recipe. I ditched the guy and lost the recipe, and I've been looking for something similar ever since. (aside - I wouldn't go back to that darkness for anything, even banana bread)

I finally found a banana bread that meets my specifications:

light, but dense
contains oatmeal, but isn't too chewy
doesn't turn all brown and burned on top like a lot of banana breads (gross)
doesn't start out with a crapload of sugar
nummy

Oh, and my recipe? Totally better than the one I lost. Karma.



Banana (Oatmeal Walnut) Bread

1/2 c. softened butter, but not melted
3/4 c. brown sugar, packed
2 eggs, beaten soundly
1/4 c. milk
1 1/3 c. ripe bananas (about 2-3, mashed) (not too ripe! but too ripe for cereal) (think lots of spots)
1 1/2 c. flour
1 tbsp. baking powder
1/3 c. old-fashioned oats
1/2 c. chopped walnuts

Preheat oven to 375 degrees. In large bowl, beat butter and sugar at medium speed until smooth. Add remaining ingredients. Beat 1 to 2 minutes until batter is smooth. Spoon into lightly greased bread pan. Sprinkle (a little) oatmeal and brown sugar over top if desired. Bake 45 to 50 minutes until toothpick inserted comes out clean. Cool before removing from pan.

Also can make 3 mini loaves, bake about 30 minutes.

Yum. That sounds almost identical to the recipe I usually use, except that I always leave out the nuts, and I haven't heard of adding oatmeal. Maybe I'll try it! Thanks for sharing!

If it gets cooler around here, I'll have to try this!

My favorite part is that the eggs must be "beaten soundly". Heh heh.
